Types of Knife

Small cleaver calls Sangdao in chinese. Sangdao calls Small Slicer or Small Cleaver in English. It is one of chinese chefs' knives. Most of them are made by high-carbon steel. Sangdao is a kind of light and thin knife. Almost Sangdao just only 260 - 460g. Sangdao has three sizes: large, medium, small. Sangdao can quickly and precisely julienne, slice meats and vegetables, but it coud not cut any of bones. Please do not use it to cut bone, it is very easy to demage.

Kitchen Slicer calls Piandao in chinese, it is a little bigger and heavier than Sangdao (small cleaver), and it also thin and light. It can quickly and precisely slice meats and vegetables, but it coud not cut any of bones. Please do not use it to cut bone, it is very easy to demage too.

Cleaver (Chinese Vegetable Knife) calls Caidao in chinese. It is designed to uses the fronter blade to slice vegetables, meats, the rear blade to chop small bones, like chicken bone, spareribs etc.
