This chinese chefs knife is fantastic. The balance of the knife, the thin blade and the sharpness of the blade makes this a wonderful knife to work with. It is as if it chops by itself. Be sure to keep your fingers out of the way, as it is really sharp. If you are not familiar with a chinese chefs knife, you should learn to hold it right. You let your thumb, index finger and possibly your middle finger grasp the blade. This gives you a lot of control with out a lot of effort. You will love this knife if you spend a lot of time in the kitchen.
